Moist & delicious, made with organic carrots, toasted pecans & pineapple, carrot cake is my second most popular cake. For all of you carrot cake lovers out there, you can’t pass on this version. Sophisticated. Swanky. Stunning. Our favorite memories of caramel candy bars grow up in this luscious cake, bringing caramel to an entirely new level of delish. This cake almost requires a map to help you make your way through the chocolate cake, ganache, raspberry puree and raspberry-studded caramel mousse. If you love strawberry shortcake, this is your cake. The yellow cake and Grand Marnier whipped cream take supportive roles to the lovely strawberry. For those who would prefer an alcohol-free cake, just tell me and I will substitute fresh squeezed orange juice where I normally use Grand Marnier. This coconut cake is for those of us who dreamily reminisce about that tall, old-fashioned slice of coconut cake that used to arrive for dessert at our grandmother’s house. Coco Loco combines the lightest of white cakes, flavored with a hint of coconut, filled with an airy coconut cream and frosted with coconut meringue. This cake takes Vermont maple syrup to a new divine level. A local bride recently requested a maple cake for her wedding. She grew up in Canada, tasted a maple cake once in elementary school during a bake sale, and wanted this piece of her childhood to be a part of her wedding day. I had never made a maple cake before, and am surprised to say that it is truly addictive. This moist cake is lightly spiced with cinnamon and cardamom, and is sweetened with Vermont Maple Syrup. Filled and frosted with maple syrup cream cheese frosting and garnished with crushed homemade gingernaps.
